Almond Butter Protein Balls

Just think, sweetened almond butter AND instant muscle fuel!

This little ball of energy is sweet, nutty, protein packed and, unlike store bought energy bars, has simple ingredients that you can pronounce. The high quality protein, low glycemic carbs and healthy fats provide instant energy during or after endurance activities.  I typically eat it when I start to feel sluggish on my long runs.

Almond Butter Protein Balls
Yield: 1 ball

1 tablespoon almond butter
1 tablespoon protein powder
1 tablespoon agave (or honey)
3 tablespoons instant oats

  1. Combine all ingredients in a bowl and form into a ball.
  2. Freeze for 30 minutes if you want to use immediately. Otherwise, store in the refrigerator.

Today, I packed a ball to fuel my 8-mile run and could really tell a difference after eating it. However, the ball had to be formed into a bar to fit in my running belt. I highly suggest a running belt if you need to run with a key, cell phone, snack, etc. It is small and does not bulge out from under your shirt.

I was excited to use my Garmin today. My pace and distance were streaming live from my own wrist. I love new gadgets!

Stuffed Vegan French Toast

This morning I was in the mood for something decadent, sweet and filling. My step-mom sent me a a beautiful picture of french toast she had on a recent trip to New York and I’ve been dying to make a vegan version ever since.

This recipe is adapted from Sara at (never home)maker. This french toast recipe is delicious and, I would even wager, better than the traditional version. The banana added a subtle sweetness that was perfect for breakfast. I stuffed my waffles with almond butter, but yogurt or fresh fruit would be great too.

Vegan Stuffed French Toast

1/2 Large Banana
1/2 C. Soy
2 t. Ground Flax Seed
1 t. Almond Butter
1/2 t. Cinnamon
1/2 t. Vanilla extract
2 Slices of Whole Wheat Bread (I used honey oat bread I got at the farmers market)

Toppings/Stuffing Ideas:
Strawberries, bananas, blueberries
Almond butter
Yogurt
Maple syrup
Anything you have on hand

  1. Cut the banana into chunks and place all ingredients, except the bread, into a blender. Blend until all lumps are removed.
  2. Pour batter into shallow bowl and soak each piece of bread.
  3. Spray a pan with cooking spray (this is important!!) and bring to medium heat on stove.
  4. Place the french toast on the pan and cook until golden brown and flip, allowing the other side to do the same.
  5. Stuff and top you french toast.

Afterthought: you might opt to toast your bread in a toaster prior to soaking it in the batter if you want the consistency of ‘regular’ french toast. The banana doesn’t firm up like an egg does.

You will not be disappointed.

I’m off to meet a group in the lab to finish up a project and report. We also have to work on a proposal for our next project…it’s a vicious cycle.

Home Sweet Home

Morning!!

Before heading to yoga last night, I finally got my car unpacked and took over the front sitting room in the process…

How did all that fit in my car?!? I must be a packing genius ;)

My room is a whole other story…it has become my own personal storage unit at La Casa de Parents. It currently has all my furniture, washing machine, dryer, books and everything else that was not a necessity for the summer. Yes Kelly, my food processor, blender and exercise ball are necessities. Priorities my friends.

In t-minus one week all this is going to be loaded up and hauled to school. Oh, the joy of moving….

Before heading out for my morning run I had AB&B toast for some energy.

I ran for about 30 minutes listening to the soundtrack from Across the Universe. Its a compilation of songs The Beetles wrote, just sung by various artists. I double checked my distance online at mapmyrun.com when I got back. This is a free online tool that allows you to enter the address of your starting point and trace your route. Its great because you can save your runs, add water stops and loop your distances if needed. My total was ~2.9 miles.

Note-to-self: DON’T run past 9am. It is WAY too hot!!

Post-run fuel was a 3 egg white puff with garlic pesto and cumin. I also had some walnuts and grapes (x’s 2)

This combo was delicious!!!

I’m off to go deal with the crazy landlord from New York that wants us to pay $300 for a spec of dirt we left on the wall : Have you ever had problems with a landlord or getting your security deposits back?
