Vegan Chocolate Pudding
It is time for a Tuesday treat!
I don’t know about you, but I always have mushy brown bananas and ripe avocados from previous over-zealous shopping trips that I need to put to good use.
It’s time to grab that browning banana and mushy avocado for this chocolate pudding. I was first introduced to a similar recipe at the Whole Foods Cooking Class I attended awhile back. The banana and dates supply the perfect sweetness, while the avocado provides a luxurious creamy texture. You do not taste the avocado at all. I used 1/4 cup of soy milk, but you can add more or less to alter the thickness. Use a frozen banana to make vegan chocolate ice cream. Make sure to peel the banana before you freeze it.
1 ripe avocados
1/4 cup raw cacao
2 dates, pitted
1 very ripe banana
1/4 cup soy milk
1 T. almond butter
1 t. vanilla
- Roughly chop dates, place in a small bowl and cover with hot water. Let stand for 30 minuets. Strain water off.
- Combine all ingredients in a food processor and mix until smooth.
- Chill in the fridge for 30 minutes.
For those of you thinking, “2 whole avocado’s?!? That’s a ton of fat, right?!” Well, avocados are actually a nutritional powerhouse:
- Avocados are an excellent source of glutathione, an important antioxidant shown preventing aging, prostate and breast cancer, and heart disease.
- Avocados are a good source of potassium, a mineral that helps regulate blood pressure.
- Avocados are a good source of folate, a nutrient that is important for stroke prevention and heart health.
- Avocados are a good source beta-sitosterol, a compound that has been shown to lower cholesterol levels.

As for what’s been going on in my life:
- Last weekend I went home with one of my best girlfriends for her dads retirement party. I had a blast with her family and had a real Texas experience. She is from a small agriculture-oriented town and showed me rice fields, farming irrigation systems and monster tractor equipment. I’m still not convinced I need to buy a pair of boots.
- I finally booked a flight to Paris for my end-of-college-last-time-before-I-work backpacking trip through europe! A friend an I found an excellent deal on one-way tickets. We still have a lot of planning to do and have yet to purchase return tickets (yes Mom, I’ll get right on that).
- I quit CrossFit.
- I received two free weeks at a local gym from a friends sister-in-law. I took another Zumba class and a killer step class.
- I’ve been recruited to be the driver for our formula hybrid race car!! A team of mechanical engineering students build a car each year for a national competition. I’m the lightest mechanical engineer who knows how to drive a standard. This past weekend I met them at the track to learn to drive. I even got to wear the helmet, gloves and race suit. It was so exciting! If I make the cut, I will be doing the acceleration trials a their competition! I’ll take pictures next time.
