A Random Post of My Hectic Life

Hi Bloggies! Long time, no see. This is not a typical post for me, but things have been pretty hectic around here as I wrap up my senior year in college.

I’ve been building tricycles…

…that fold! This design has a gas engine, but our other two designs have electric motors. Pretty cool, huh?

My senior design group has been busy testing our devices at a BMX track. We came home with bruises and broken bikes. The group has been diligently working to get the bikes fixed, PowerPoint presentations looking professional and having shirts made so we look like a team…all before we leave  to New Mexico for our design review. Our flight leaves at 6am tomorrow, so I have to get up at 2:30am to drive to the airport. Yikes!

I’ve also been driving our schools formula hybrid race car! Universities all across the nation participate and they want me to do the acceleration runs! If I go, I will be in New Hampshire the following week.

Being busy doesn’t keep me out of the kitchen or gym. To de-stress, I hit the weight room or go on quick runs. I’ve also managed to squeeze in time to make rustic Irish Soda Bread and a Lentil Sunflower loaf. I definitely need to give y’all these recipes.

I may be tired and have bags under my eyes, but at least I don’t have a cone on my head…

Poor Bello just got neutered.

I’ll be back shortly with recipe updates and regular posts. Until then, I will be riding a bike up a seven mile, mountainous course in New Mexico. I wish I could say I’m not nervous, but that would be a lie. Wish me luck!

I’m off to work on an essay and homework assignment that are due while I’m gone.

It’s FINALLY Friday! And boy am I ready for the weekend. Senioritus is kicking in and all I want to do is go lay out and enjoy the outdoors. Unfortunately, duties call.

I have class in a few hours and still need to read a chapter. I’m also debating whether or not I’m going to drive home today because the formula hybrid race team wants me to test drive the car for them this weekend. If I make the cut to be their driver (for the acceleration runs only) I will be flying up to New Hampshire the first week in May! I’m really excited, but definitely need to practice. I also really need to go home to take care of graduation invitations and some other miscellaneous thing. That’s my dilemma for the day. Next time I post I’ll let you know what the status is and hopefully have some fun pictures.

I am going to enjoy my Friday morning by making quinoa (cooked in soy milk) with banana’s, walnuts and cinnamon. mmmm! Have you ever tried this combo? It holds me over a lot longer than oatmeal. Also, I actually prefer the flavor and texture of quinoa over oats.

Greek Yogurt Morning Muffins

When life gives you lemons, you make lemonade.

When life gives you greek yogurt, you make muffins. That’s how it goes right?!

Well, maybe not, but to celebrate the greek yogurt giveaway I made breakfast muffins! I use the term ‘breakfast muffin’ because I prefer breads with only a hint of sweetness in the mornings. I used Stonyfields Super Fruits flavors to add moisture and sweetness to these muffins.

These little babies are protein packed, moist and delicious! Thanks to the fruit-flavored greek yogurt, there are no added sugars. I also used spelt flour.

“Spell what?!” you ask? Spelt flour is made from a spelt berry, is a species of wheat and can be used in recipes whenever whole wheat is called for. It contains more protein and can sometimes be tolerated by people who are allergic to wheat because it is easier to digest. Spelt, like wheat, contains gluten and is not suitable for a gluten-free diet. Spelt is also a helpful food for people with migraine headaches, atherosclerosis, or diabetes. Interesting! (source)

My dad starting making home-made spelt bread when I was younger because I had a slight allergy to wheat. To this day, he still makes it weekly. What a great dad! I love the nutty flavor and was excited to use it in these muffins.

Morning Raisin Muffins

Yield: 12 muffins

Dry:

2 cups spelt flour
1 t. baking powder
1 t. baking soda
1/2 t. fine grain sea salt
1/2 cup raisins

Wet:

flax seed ‘egg’ (2 T. flax seed meal + 6 T. warm water)
1 cup (2 5oz containers) Greek yogurt, fruit flavored*
1/2 cup soy milk
1 t. vanilla
1 T. vegetable oil

  1. Preheat oven to 300ºF (spelt cooks faster than wheat flour).
  2. Mix flax seed ‘egg’ in small bowl and set aside.
  3. Combine the dry ingredients in one large bowl and the wet ingredients in another large bowl.
  4. Add the wet ingredients to the dry ingredients and stir to combine.
  5. Spray muffin tin with cooking spray. Scoop the muffin mix into the pan.
  6. Bake for ~30 minutes. Use the toothpick test to make sure they are done. Cool on a wire rack.

* blueberry, strawberry, blackberry or pomegranate greek yogurt would work well too.
