Black Bean and Avocado Salad

Good news!! I finally have my computer back from the computer store. The not-so-good news is that I had to pay $95 for nothing. They initially called and told me the problem was my external power adapter, but when I got to the store mine worked just fine. Yes, it was the same power adapter that wouldn’t provide power to save my life on Monday. Their advice was to take a Q-tip and clean the connection on my power adapter. I was livid. Did I really just pay someone to tell me that? Did they not have a Q-tip? I angrily took my computer back, swiped my credit card, signed my name and slammed the pen down. With hesitation, the salesman told me to “have a great rest of the day” on my way out. He got the evil eye in return.

However, my day did get better. With my computer back, and working until I need a Q-tip, I was able to get a lot of needed research done. I felt handicapped all week without a computer. What did we ever do without computers?

Without further delay, here is the black bean and avocado salad recipe I’ve been dying to tell you about. I liked it so much that I decided to modify the recipe to create a chunky guacamole-style dip. I brought the dip to a super bowl party and everyone loved it. Here is the original….

Black Bean & Avocado Salad
Yield: 4 servings

1 15 oz. can of black beans
1/2 cup frozen edamame
1/2 cup frozen corm
1 avocado, mashed
1 red bell pepper
1/4 cup of cilantro
4 green onions, chopped
Juice of one lime

  1. In a large bowl, combine lime juice, mashed avocado and cilantro until well blended.
  2. Add remaining ingredients and toss to combine

I’ve made this a few times and really enjoyed pairing it with rice or piled on spinach.

For the dip, I made these changes:

  • used 2 avocados
  • replaced the edamame with corn (1 cup total)
  • added 3, deseeded and chopped Roma tomatoes

Make sure the avocados are ripe. I purchased avocados a few hours before making the dip and ended up with a more chunky consistency than I hoped for.

For the sake a sharing delicious recipes, cross your fingers that Q-tips will not be needed anytime soon.
