Scrambling
Scrambling…the theme of life for me right now. I have 3 group projects, 1 individual project, a presentation, a paper and a homework assignment all due next week! It is all under control, but I’ve been scrambling to stay on top of everything. There has been many early mornings and late nights in the lab. On top of all that, my first final is next Friday. I will be hitting the books after my last class on Tuesday.
I went on a de-stressing 5 mile run this morning, the first since my half, and it felt great. I then made something that corresponded with the theme of my week; a tofu scramble. This is not any ordinary tofu scramble, it is a spicy tofu scramble! It has a huge kick and veggies to boot. I added every spice I could think of and the flavor turned out really well. However, if your not a fan of spicy food, you might want to cut back on spices. My secret ingredient is red curry paste. Red curry paste never fails to make its way into my tofu scrambles and has even survived moving between Kentucky, New York and Texas. Thats how much I like this stuff.

Spicy Tofu Scramble
Yield: 1 large serving
1/2 Block Tofu
1/2 Small Onion, sliced
1/2 Green Bell Pepper, diced
A few handfuls of spinach
1/2 t. each of Red Curry Paste, Curry and Graham Masala
1/4 t. each of Paprika, Red Pepper and Turmeric
1.5 T. EVOO
- Slice tofu into slabs and press according to this method. “Scramble” tofu by dicing with a fork.
- Heat EVOO in skillet over medium heat and add the onions. Saute for 3 minutes.
- Stir in spices and cook for an additional 3 minutes. If the spices start sticking to the bottom of the pan, add a few teaspoons of water.
- Add tofu and bell peppers. Cook for ~ 7 minutes, stirring frequently.
…and voila!

Update on the FDA Food Safety Bill: The bill (Short summary here) overwhelmingly passed in the senate on December 1st and is awaiting reconciliation in the House and President Obama’s signature. This has to be done before this session of congress ends and there are many things that can derail the bill between now and then. Many people are not happy with the bill and articles such as this outline why. The New York Times also summarizes the reactions towards the food safety bill.
