Vegan Pizza Bites

Remember those pizza bites you probably ate when you where younger? Well heck, maybe you still have them stowed in your freezer. They are not the healthiest thing, but they are a quick snack you can heat up at the push of a button. Well, today I reinvented a healthy vegan version. Totino’s pizza rolls move aside, Lana’s pizza rolls are here to stay.

Vegan Pizza Bites

Yield: 8 bites

Dough
1 1/4 t. Active Dry Yeast
1/2 t. Sugar
1/2 C. Warm Water
1 C. Whole Wheat Bread Flour
1/2 t. EVOO
1/2 t. Salt

Pizza Stuffing
1/4 Red Bell Pepper, minced
1/4 Green Bell Pepper, minced
1/4 C. Tempeh, crumbled
2 Garlic Cloves, minced
2 Slices Mozzarella Veggie Cheese

3 T. Tomato Sauce
1 T. Tomato Paste

  1. Combine yeast, sugar and water in small bowl. Set aside until bubbly. Combine flour and salt. Stir in EVOO and yeast mixture. Cover and let rise for 45 minutes.
  2. While the dough is rising, mince all the veggies and crumble the tempeh with a fork (see picture below). Cut each slice of veggie cheese into four equal pieces. Combine tomato paste and sauce in small bowl.
  3. Spray cookie sheet or pizza pan with cooking spray. Once the dough has risen, push and pat the dough into a rectangle on the cookie pan. You will need to sprinkle four on your hands because the dough will be sticky.
  4. Cut dough into 8 equal pieces, top with sauce mixture and assorted veggies, cheese and tempeh.
  5. Roll to form pizza bite. Bake at 425ºF for 15 minutes.
