Quinoa Quiche

I pounded out 13 successful miles this morning. I am now 100% ready for the half marathon. I was so proud of myself!! The next two weeks will be taper weeks with some speed work. To celebrate, I treated myself to a shopping trip. I was in the market for a new dress, but was not able to find anything. Even Texas is starting to put out warm clothes. I ended up not purchasing anything, but had fun just trying things on.

Before I left for the mall, I made a protein packed quiche. This is not for the faint of heart. It combines protein from eggs, edamame and all the nutritional benefits of quinoa. I used leftover quinoa I had sitting in the fridge, so it was fast, easy and kept me full all afternoon. I love quinoa and always have it in the cupboard…my recipe page can vouch for that. lol!

Quinoa Quiche

1/2 C. Quinoa, cooked
1/2 C. Edamame (defrosted if frozen)
4 Egg whites
1 Egg
Handful of spinach
Parmesan cheese

  1. Preheat oven to broil (500°F)
  2. Spray skillet with cooking spray and heat over medium heat
  3. Add all the ingredients, except parmesan, and cook until the egg sets
  4. Top with parmesan and place in oven for 5-7 minutes

Easy as pie…

I currently watching ‘How I Met Your Mother‘ with my roommate. He swears it is the new ‘Friends‘. Is that even possible?!?!

I’m about to get ready, head out for salsa lesson and latin night. Get excited!!
