Chocolate Oatmeal & PB Cookie

Happy Sunday!!

Texas A&M has a rich heritage of traditions that never cease to amaze me; the Twelfth Man is one of them.

Last night the ‘twelfth man’ consisted of 81,300 sweaty and excited fans. We kick off the season with a glorious win over Stephen F. Austin University. 48-7! Whoop! (<–Aggie lingo)

I’m not the biggest football fan you will ever meet, but I LOVE Aggie football! I couldn’t even begin to tell you what some of the penalties mean, but I understand the basics. 10 yards = 1 down, after 4 downs the ball goes to the other team, ball in end zone = score!

This video has been played at the beginning of each game since my freshman year and still gives me chills.

Random Aggie fact: We do not have cheerleaders, we have Yell Leaders. Each year, five males are selected by the student body to be the “keepers of the spirit” and lead yells at the games. It’s an old military school, need I say more?

Yesterday afternoon I took a nap (which I rarely do) and woke up craving something chocolate and breakfast-esque before meeting my friends to go to the game. I settled for what I could find in the pantry; oats, cocoa powder and peanut butter. I absolutely love any combination of chocolate and peanut butter. Do you remember the Peanut Butter Patty cookies that the Girl Scouts used to sell? Those were/are my favorite cookies.

Behold, chocolate oatmeal and PB cookie!!!! This was SO GOOD!!

Disclaimer: Looks strange to the untrained eye, but this is definitely Cookie Monster approved.

Chocolate Oatmeal and Peanut Butter Cookie

1/2 C. Old Fashioned Oats
3/4 C. Vanilla Soymilk
1.5 T. Cocoa Powder
1 T. Protein Powder
1 T Peanut Butter
1 T. Brown Sugar (optional)
1/2 T. Ground Flax Seed
Peanut Butter for filling
Dark Chocolate Chips for toppings (optional)

  1. Mix first 7 ingredients together in a bowl.
  2. Microwave for 30 seconds and stir. Repeat 2 more times.
  3. Let cool for a few minutes and form into two patties. Place the patties in the freezer for 30 minutes.
  4. Remove patties from freezer and put peanut butter in between chocolate patties. Top with dark chocolate chips.

Pour yourself a glass of (soy)milk and enjoy!!!

This morning I ran 7 successful miles in 1 hour and 5 min!!! I determined my route on mapmyrun.com while eating AB&B toast and sipping on half a cup of coffee; standard pre-run fare.

After my run, stretching and icing my knees I threw together a combo of greek yogurt, Grapenuts, walnuts and fruit before heading out to meet my lab group to work on a proposal.

I am in a class where we have to design and conduct our own experiments. My group is going to determine which cooking material is “best.” Imagine who put that idea in their heads. Plus, it will be a super easy and fast (8th grade style) experiment that meets all the requirements ;)

We are defining “best” as the material that takes the shortest time to heat up and has the most uniform temperature distribution. There will be a hot plate, thermal imaging camera and multiple thermocouples involved…but no actual cooking :(

Yes, senioritis has officially hit.

Any guess as to which cooking pot material is best? Copper, stainless steel, carbon steel, cast iron or aluminum? I’ll keep you updated.

  2. OMG I am obsessed with Aggie Football Season! I am class of ’07 but I have been going to games since I was a kid. I think the only time I didn’t absolutely love it was when I was a student, simply because we were standing and always in the sun. Also, love the video they play! It always gives me goosebumps. Ah and the drums before they run out onto the field…okay I should probably stop ranting, but yea for Aggie Football!
