Growing Up

I made it through the first week of school after battling my way through the Atlanta airport, living through a day of 4 interviews, moving into a new apartment, biting my nails in anticipation and jumping at my phone each time it rang…

Well my friends, Thursday afternoon I received the call - you know, the call every graduating college student and unemployed person dreams of – “we are pleased to offer you a job.” Sequels, jumping and screaming ensued!!! Not to mention calling all the family members to tell them I needed new finger nails the great news!!!

I just turned 22, am graduating from college in t-minus 9 months (not like I’m counting or anything) and have a full time position with a great company!!! It’s like I am actually growing up or something…

…wait, who am I kidding?!

I still play with my food.

(Fitnessista inspired breakfast cookie with 1/3 cup oats, 1/2 a mashed banana, 1/8 cup vanilla soy milk, flax seed, protein powder and raisins all mashed together and placed in the fridge over night. The blueberry hair and a raisin mouth were added in the morning.)

I still throw trantrums when my hair does not look as good as Madam Breakfast Cookie’s.

I still play dress-up.

I still go to failblog, see things like this…

…and literally laugh out loud in the computer labs on campus.

However, sometimes you have to make a grown up meal instead of a bowl of cereal…..

Quinoa Chickpea Salad

with Roasted Veggies and Lemon Dressing

Yield: ~4 servings

1 C. Quinoa
1 C. Veggie Stock
1 C. Water
1 Can (16 oz) Chickpeas, drained and rinced
1/2 Bunch of Asparagus, trimmed and cut into 2-inch peices
1 Red Bell Pepper, thinly sliced
1/2 Onion, thinly sliced
EVOO for roasting

Lemon Dressing:
~ 3 T. EVOO
Juice of 1 lemon
Lemon Pepper (you could just use regular S&P)

  1. Drizzle sliced veggies and drained chickpeas with small amount of EVOO and roast at 425°F for 15 minutes
  2. Boil water and stock in pot, add quinoa, cover and simmer for 15-20 minutes
  3. Wisk together dressing while quinoa is cooking and veggies are roasting
  4. Mix quinoa, roasted veggies and beans together. Drizzle with dressing and mix well. Enjoy!

I’m off to relish in my adulthood go play Rock Band and Guitar Hero with friends.

  2. I was wondering if you ever considered changing the layout of your website? Its very well written; I love what youve got to say. But maybe you could a little more in the way of content so people could connect with it better. Youve got an awful lot of text for only having 1 or two images. Maybe you could space it out better?

    • Great suggestions! I’ve been curious with what readers think. The layout is a work in progress. Obviously a lot more needs to be done. I recently ask a friend to help me out with the layout, am working on taking more pictures and will definitely improve the content. Unfortunately, school has taken the front burner (so-to-speak) so I am no longer able to post as frequently as I want to.
