Productivity at its Finest

Today has been rocking along and I’ve been uber productive. Breakfast was 1/2 cup Grapenuts, 1/2 greek yogurt, 1/2 banana, blueberries and almonds. There was also an un-pictured cup of coffee to go.

I got a whole lot done on my projects at work and left for lunch to run errands. Things I got to cross off my todo list today:

  • Post office (I will now have a happy roommate at home who will received a utility bill)
  • Bank
  • Notary (for insurance papers)
  • Use up leftover Mediterranean Summer Squash

So lunch, as you might imagine, was a spinach salad topped with Mediterranean Summer Squash, 1/4 of an avocado, sliced bell pepper, carrots and crackers. I also whipped up a homemade dressing: 1 part EVOO, 2 parts balsamic vinagarette, 1/2 lemon…mmmm!! I had to scarf this thing down quick…

…and still made it back to the office by 1pm!!! I was hungry by 3:30 and had an apple and homemade granola bar to hold me over.

I literally just got home (6pm EST) because we had mock intervews at work that lasted longer than expected. It was set up like speed dating, but instead of dating you were being pounded by an interviewer. Wait, isn’t that a little like actual dating?!?! ;) However, unlike dating, we received feedback instead of a lame conversation leading to a non-returned phone call.

On a more serious note, the mock interviews were actually very beneficial and I got some great feedback. I am excited to announce that I applied for a full-time position with the company I am currently working for!!! I do not have an interview date scheduled yet, but I can’t wait to give you some positive news in the near future!!

Anywho, productivity calls….I will see y’all later tonight with a channa masala recipe!!

  2. Just randomly came across your blog, read your “about me” and got all happy! A Texan! My husband graduated for Texas A&M in 2008 and I graduated from Texas Tech! Good luck wit the job search and interviews!
